EXTRA VIRGIN OLIVE OIL: The variety of olives, grown in soil rich with the volcanic tuff of the Montalbano hills produces a fragrant oil that has made it incomparable worldwide. The low rate of acidity of this oil is fruit of healthy olives harvested by hand at just the right time, brought ripe to the olive press within 48 hours of being picked. Sommavilla extracts cold the extra virgin olive oil which exalts its genuine flavor and it is stored in traditional chilled vats made of terracotta. (composed of 50% moraiole olives, 30% frantoie olives, 20% leccine olives).

Characteristics: Dark green color with golden tint. Intense perfume, fruity, fresh. Full flavor with hints of artichoke and herbal scent, after taste is spicy and slightly bitter.
Best with: Ideal with meat, fish, salads, cooked or raw legumes.
Storage: Best kept far from light in a dry, cool place.

WINE: 
The wine produced at Sommavilla is obtained from vines planted about 300 meters in altitude. The union of various grape qualities, planted in soil rich with volcanic tuff, gives birth to a limited quantity of product but the quality of the wine is incomparable.

Winemaking grape: Red, separated in various varieties

Aging: in stainless steel barrels for 5 months 

Characteristics:  Tannin and acidity in the mouth are present, but the structure is smooth and ready to conquer the palate

Alcoholic level: 13,2% vol.

Grapes:  Sangiovese, Canaiolo nero, Colorino

Origin area:  Montalbano ( Tuscany )

Land quality :  Rocky 

Planting system:  Tuscan arching, low trellis cording

Winemaking grape: Red, separated in various varieties

Aging: in stainless steel barrels for 5 months 

Characteristics:  Very smooth taste, balanced, compact, absolutely persistent    

Temperature: 18°C 

Alcoholic level: 13% vol.

Vino: IGT White Tuscan “ La Fontanaccia ”

Grapes:  Tuscan Trebbiano, Viognier, Fiano

Origin area:  Montalbano ( Tuscany )

Aging: in stainless steel barrels for 5 months

Wine: IGT Tuscan red “ Angelico “

Grapes:  Cabernet Sauvignon, Syrah

Origin area:  Montalbano ( Tuscany )

Yield per acre : 5000 grapes per acre 

Winemaking grape: Red

Aging: in stainless steel barrels for 5 months then in French Oak barrels for 12-18 months

Characteristics:  Intense red ruby color, light garnet tint. Smooth bouquet with thick tannin taste which is round and persistent  

Temperature: 18°C 

Alcoholic level: 13% vol.

Accompany with: grilled meats, red meat, wild meat, aged cheese


GRAPPA: 
“Sommavilla” Grappa is made from the peels of grapes used to make fine Chianti wines. The peels, after the fermentation process, are accurately selected and then distilled.
    Characteristics: White color, light fruity bouquet, warm smooth flavor.

Alcohol level: 43% alc./vol.

Tasting: Grappa Sommavilla at a temperature of 12°C, is best tasted in a fine tulip shake glass, heated in your hand to assist the blossoming of flavor

"VENDEMMIA TARDIVA":

“Dolce Di Vino” The sweetness of wine. Late harvest yeilds a sweet wine obtained from the Malvasia and Trebbiano grapes of Tuscany originating from 40 year old vines. The grapes are left to fully ripen on the vines under the Autumn sun and are then picked in late October, by hand, in the early morning hours of the day. Aged and refined in barrels for 24 months.

Alcoholic level: 15% vol.
